2022 Vintage Baird Sidra from Cameron Winery in Dundee, Oregon (Willamette Valley)

Sidra is a traditional-style hard cider that originates from the Asturias region of Spain.  The apples for Cameron Winery's Baird Sidra come from Baird Family Orchard in Dayton, Oregon.  The apples used in this cider are a complex assortment of Asturian varieties such as Coloradona, Piel de Sapa, Repanaldo do Liebana, and Solarina; plus a few other popular cider apple varieties such as Kingston Black, Golden Russet, and Dabinett. 

The cider is finished in neutral Pinot noir barrels in order to impart flavors that resemble a true dry Asturian sidra. Its aromas are brilliant apple blossom and rose petal, which pop out of the glass a bit courtesy of the lively sparkling cider.  On the pallet, it's a dry cider with bold (medium-plus) tannins and high acidity. Flavor notes of green apple, citrusy lemon & lime zest, honeycomb, and some yeast driven phenolics. It has a very pleasantly long finish with notes of black tea and a slight salinity. 

The Drosophila on the label, a nod to our constant companions during fermentation, was drawn by John’s mom Eugenia in 1936 when she was a scientific illustrator for  in the genetics department at Cal Tech.

More about Baird Orchard: Trevor Baird is a 4th generation Willamette Valley farmer whose holdings include the original farmstead near Dayton, Oregon.  His 5th grade teacher was the wife of Alan Foster - the orchardist responsible for planting one of Oregon's most iconic cider apple orchards, White Oak Orchard (). Trevor got to know Alan at an early age and be inspired by him.  When Trevor was starting to run the farm he dutifully planted some cider varieties that he obtained from Alan, including Kingston Black, Dabinette, etc.  He has more recently concentrated on growing beloved Asturian varieties.
